The First Sign of Autumn, Yummy Guilt-free Pumpkin Bread or Muffins

 

Ingredients:
6 Tbsp. flour
2/3 cup non-fat milk powder
6 packets of Sweet n Low
1 tsp cinnamon
1 tsp pumpkin spice (Allspice, Nutmeg and Cinnamon)
1 tsp vanilla
1 cup pure canned pumpkin
1 tsp baking soda
2 eggs beaten frothy
4 tbsp raisins (optional, and adds a few calories)
Mix together dry ingredients in bowl set aside.
Mix together pumpkin, vanilla, and beaten eggs. Add to dry mix well. 

Bake at 350° approx 30 minutes for muffins 50-55 for load. Makes 12 muffins or one loaf of bread...
